'Quarantine recipes; Matar chaat or ragda chaat is one of the famous street style chaat recipes from eastern Uttar Pradesh. Chaat is generally everyone’s favorite and there are also different variations to it according to the taste. This chaat is completely oil-free, gluten free and the best of all high in protein. Ingredients- White mater (soaked overnight)- 1cup (250gm) Onion (finely chopped) – medium Tomato (finely chopped)-1 medium Green chili (finely chopped)-2 Ginger grated-1tsp Green chutney -2tbsp Tamarind (Imli) chutney -2tbsp Roasted jeera powder -2tbsp Red chili powder -1tsp Black pepper -1/2tsp Black salt White salt Haldi-1tsp Chaat masala -1tsp Method – 1- Soak the matar overnight then boil adding white salt and haldi. Cook it for 4-5 whistles as matar must be completely soft. 2- In a big bowl take the boiled matar and let it come to room temperature. Add black salt, roasted jeera powder, red chili powder, chaat masala, black pepper powder and mix well. 3- Take a portion of this masala matar in a bowl/plate in which you want to serve. Mix half of tomato, onion, chili, green chutney, imli chutney and ginger to it. 4- Now sprinkle some onion, tomato green chutney, imli chutney, red chili powder and jeera powder. On the top some sev and matar chaat is ready.'
